covered about 45 minutes.... but no salt till they are already cooked thoroughly.....the salt will make them tough if you putit in while they are cooking, wait till they are done..... this goes for all legumes!! i never soak mine.......

There are two ways to cook beans: 1) The soaking method: Soak overnight. Make sure they are completely covered by a good 6 inches of cold water. The next day, drain, rinse and cover beans with cold water. Bring to a boil and reduce the heat to a simmer for about 30 min - 1 hour until tender, depending on what type of beans they are. 2) The "forcing" method: This is the fast way to do it without soaking. Put the beans in a pot with water and bring to a boil. Take the beans off the heat and put a lid on the pot. Let them sit 1 hour or longer. Drain and rinse and add cold water to cover, bring to a boil and reduce heat to a simmer. Will take 30 min - 1 hour until they are tender, depending on what type of beans they are. I think all dried beans are pretty much comparable when you look at their nutrient content. They are an excellent source of protein. Eat a variety of different kinds. Here is a good recipe: Black beans 1 cup Mustard oil 2 Tbsp Coarsely chopped garlic 2 Tbsp Cumin seeds 1 tsp Black peppercorns 5 Dried Indian red chilies 3 Asafetida 1/4 tsp Coriander powder 3/4 tsp Cayenne pepper 1/2 tsp Turmeric 1/4 tsp Salt to taste Ghee (clarified butter) 2 tsp Gram masala 1/2 tsp Cilantro, chopped 3 Tbsp 1) Force or soak the beans 2) In a pan, heat the oil and add garlic and saute until golden, about 1 min. Add cumin seeds, peppercorns, red chilies and asafetida and saute 1 min. 3) Add rinsed beans, coriander cayenne and turmeric and cover with water. Bring to a boil and simmer until beans are tender. 4) Season to taste with salt, ghee and garam masala. Sprinkle with cilantro and serve. This is an Indian dish. Asafetida eliminates the flatulence normally caused by beans. You may have to go to a natural foods grocery store or an ethnic grocery store to find all these ingredients.

I don't soak mine overnight either. I add enought cold water to cover, bring to boil and cook at a fast simmer for 20 minutes. Turn off heat and let them sit until you have the rest of your chili almost together. Drain and refill pot with water, bring to a boil and simmer until the skin cracks when blown on. The second cooking I usuall add seasoning to the water - the beans will absorb some of the flavor, but never salt.

I have a helper it's called a pressure cooker. But since you might not have one. Cover beans with cold water bring to hard boil, shut off flame cover for 1/2hr to 1 hr. Drain and cover with fresh water, bring to boil than cut down flame and let them simmer until tender. Add seasoning after .

about 30 minutes. I also usually change water like 3 times when they start boiling, it makes beans less gassy

the toughness of the beans is what determine how long they cook
since you didnt soak them then it might take about 3 hours or so for them to be done
