Instead of buying canned "mixed" fruit, you buy a can of peaches, a can of pears, a jar of cherries. You need to chop them up, since most of these come sliced, instead of diced. Add a can of "mandarin" orange slices. DON'T drain all th syrup from the cans, maybe keep about 1/2 of the can juice from the cans.
Buy a fresh granny smith apple and a banana, and chop them up into the mix, again trying to match the size of the canned fruit pieces.
I'd use cool whip or some real whipped cream to pull the mix together, although some people use strawberry jello that the have pre-made and cooled and mashed up into the mix. Try it with both...
voila. fruit salad without pineapple.

This is an old-fashioned frozen fruit salad
INGREDIENTS:
2 small packages (3 ounces each) cream cheese
1 cup mayonnaise
1 cup heavy cream, whipped
1/2 cup maraschino red cherries, quartered
1/2 cup green maraschino cherries, quartered (or use all red)
1 can fruit cocktail (16 or 20 ounce size), drained
2 1/2 cups diced marshmallows, about 24 marshmallows
PREPARATION:
Beat together the cream cheese and mayonnaise. Fold in whipped cream, cherries, drained fruit cocktail, and marshmallows. Pour into a 1-quart freezer container. Garnish with additional maraschino cherries.
Freeze fruit salad until firm.
OR
Instead of pineapples just add your favorite fruit in place of the pineapples.

I would drink the brandy rather than use it in a fruit salad. All the alcohol will not burn off so it there is someone that should not have alcohol for health or other reasons they would not be able to have any. I would just cut the fruit and gently combine it. If you find you need a bit more juice you could use the apple juice. It would be better if it were reduced so if you boil down 2 cups to make 1 cup of syrup that should be plenty. Cut the apples and bananas as close to serving as possible as they will brown a bit, even in the juices. Add a bit of lemon juice to prevent some of the browning.

6 navel (seedless) oranges
1 cantaloupe melon, peeled, and cut into cubes
2-cups frozen strawberries, well drained and cut in halves
1-cup coconut (shredded fresh, fresh frozen, or packaged sweetened)
1 large banana
Mini marshmallows (optional)
1 small (4-1/2-ounce) bottle maraschino cherries, drained well
Peel the oranges, taking care to remove all the white pith. Separate the segments over a bowl or storage container so that you catch any juice, and add the segments to the bowl. Add the cantaloupe and coconut to the orange slices and gently toss. Chill in refrigerator for 30 minutes. (If desired, the ambrosia can be refrigerated up to two days, covered.)
When ready to serve, add the strawberries. Slice the banana and toss it with other fruits. Add marshmallows, if desired. Add the cherries last. Makes 8 servings. (Top with Cool Whip if desired.)

I do, but it calls for fresh fruit only, no canned, and you can choose any fruit you like. And it has a poppy seed dressing, so no need for extra sugars, marsh mellow, or artificial flavored non dairy whipped topping, ugh,

FRESH FRUIT SALAD
8 c. cut-up mixed fresh fruit
Bibb lettuce
Oranges, apples, bananas, pears, peaches, strawberries, grapes.
Line a large salad bowl with Bibb lettuce leaves. Fill salad bowl with fruit. Accompany with Poppy Seed Fruit Salad Dressing (see below). 6 to 8 servings.
POPPY SEED FRUIT SALAD DRESSING:
3/4 c. sugar
1 1/2 tsp. onion salt
1 tsp. dry mustard
1/3 c. vinegar
1 c. Crisco oil
1 tbsp. poppy seed
In a small bowl, combine sugar, salt, and dry mustard. Stir in vinegar. Beat at medium speed while gradually adding Crisco oil. Beat 5 to 10 minutes longer, until thickened. Add poppy seeds. Pour into a screw-top jar. Cover tightly and shake vigorously to blend well. Store covered in refrigerator. Shake well before using. Serve on fresh fruit salads, grapefruit sections, or on lettuce wedges. About 1 2/3 cups.

And do you really use Cool Whip and Marshmallows. The Marshmellow... maybe.. but Cool Whip? I thought you were joking initially.
If you really want a whipped topping, that sounded good to. But It would taste much better buy some cream (cheap this time of year) and whip it with a blender, with a little powdered sugar to sweeten just slightly.

I can't stand pineapple, either. I just cut up all the fruits that I like and put them in a bowl. Then I put some frozen lemonade over them and it's delicious. I don't know about the cool whip and marshmallow one.

Simply omit the pineapple from whatever recipe you have. There are certainly many types of canned fruit without it. Better yet, use fresh fruit, the salad will taste much better.

Yes buy all the stuff seperately in cans. Though it will take a little different without the pineapple so don't expect it to taste the same, but will still taste good. You can get canned pears, peaches, marachino cherries, madarin oranges, etc in cans and then add all the rest.

You could always get the cans of individual fruit, (ie: can of mandarin oranges, canned apples, jar of cherries etc.etc.) drain most of the juices and mix that together. that way you get the same result without the pineapple reaction. Happy Eating.....
