I'm trying to make a healthier version of a crust

My mother is an expert pie crust maker and I can tell you that there aren't any alternatives that I can give you that will yield decent results. Baking requires FORMULAS, not recipes, and substitutions in baking tend to come to problems much more often than they do in regular cooking. Shortening is there to help provide cohesion in the dough. It also provides moisture as well. There really isn't anything else that will yield the same results. The closest thing would be a product made by Crisco and some others that is sold alongside shortening in baking aisle. It's available in bars that resemble butter, but it doesn't need to be refrigerated. We've used this on several occasions as it is somewhat easier to use than regular shortening. Unfortunately I don't know about how healthy it is compared to regular shortening.

You should probably look into a graham cracker crust or some other similar alternative. There's also the possibility that you could find a recipe that doesn't use as much shortening.

There are no healthier versions of pie crust. Pie crust is made with lard or butter or shortening or oil.

There are pastry recipes using light vegetable oil, but really, if you want pie then have pie. People get so hung up on this stuff. It's Christmas! Diet next month.

Butter -- at least there's no trans fat....

But pie crust is not notoriously "Healthy". You'd have to switch to a graham cracker crust to be a bit better off.

AT MY HOUSE WE DON'T USE A CRUST. JUST HAVE THE FILLING LIKE A PUDDING OR FRUIT SAUCE. EAT ALONE OR WITH ICE CREAM OR ON ANGEL FOOD CAKE. VERY VERSATLE, AND YOU LOSE ALL THE PROBLEMS OF WHAT KIND OF SHORTENING TO USE.
