My family will celebrate the holidays on Dec. 31st but I want to make myself some stuffed poultry for my Christmas dinner alone on the 25th. I enjoy stuffing after it's cooked in poultry.

Quail is even smaller than cornish hen. It would be easier to do the cornish hens though, they hold more stuffing and have more meat on their bones. I like to put 4 on a platter (serves 8) and surround them with leaf lettuce and green grapes plus some mandarin orange sections. Very pretty.

You can stuff virtually any poultry, including poussin, which is considered to be the smallest chicken. Some people will argue that poussin and cornish game hens are the same thing, although they are technically different. Poussin can only serve one adult, and depending on the size, you might need two per adult.

In the end, you can stuff virtually any poultry you like, although whther or not it will be worth the trouble is entirely up to you.

Yeah, I think a cornish game hen is your best bet..That's what we'd always do for dad at THanksgiving, because he was the only one in our family who wasn't a vegetarian!

probably quail... you won't be able to stuff it w/ more than about 1 Tbsp. of stuffing, but they're the smallest.....
