Along with the software that came with your scanner there should be a program called "OCR" or Object Character Recognition. This software will allow the you to copy and edit text documents.

In all other cases, a scanner simply takes a picture of the document that you are scanning and creates either a jpg or a bmp file. These files can be edited in a graphics editor, but not in a text editor.

In the software you received with the scanner is an OCR program that will recognize text in a scan. You probably have all the stuff you need, just read the manual.
