I have a lot of very small bamboo stalks and I put them in my turtle cage, will it hurt the turtle to eat them?

We cannot answer this question intelligently with the available information.

As a rule of thumb, however, turtles are smart enough to eat what is OK for them, and they are very resistant to toxins and stuff that hurts people.

The real issue is not will it hurt them, but is it GOOD for them to eat it? That depends on species. Grazing tortoises, for example, would probably benefit a little from it- although bamboo has a pretty low nutritional value. Slider turtles (Red-ear Slider, for example) would not gain anything from it nutritionally.

Feed things the right stuff, not just what you have laying around.

Bamboo is basically something they can eat. but they best thing to do is feed them regularly .bamboo they can eat and will not get sick. also another thing you could put in your tank is water plants i have those and bamboo is mine. the only bad thing is the plants and bamboo can get messy as they eat them. so make sure you water is clean and clear. if it starts to get your tank dirty i would recomend taking the bamboo out
