Never below 55 F as any lower temp will cause cracking in the sheetrock walls & ceilngs and paint to crackel as well. Also many types of flooring products are affected by low temperature to.

I live in Brandon.
I keep the temperature about 50 F when I leave.
I like the idea of opening the cupboard doors to keep the sink plumbing from freezing.
I also turn off all the water and unplug all the appliances.
You could also turn off your electric hot water tank or turn the gas one to pilot.

55 ia a good temp if you have sinks on outside walls you might want to open cabinet doors to keep pipes warm and they wont freeze
