They do not mean anything. They are just used to organize cables, for example, if you have many cables in one room, and you want to grab one.

They can be used to distinguish between different connections or types of cables.
In situations where you have multiple Ethernet cables running all over the place, you can easily tell which cable is connected to which device and so forth without having to trace it back if you use a color code system.
Also some people may use color to distinguish different types of cables such as crossover or CAT 5.
Keep in mind that the color of the cable does not in anyway necessarily mean it is a specific type of cable, all ethernet cables can come in any color.

Some of the colors do mean something in pre-made cables, but what is more important is what is written on the cable itself (relating to how the ends are put on and the different combinations of cable connections...IE: Straight or Crossover cable, speed, type of cable, etc.). Color is really the least significant thing of all.

As can be seen, you can buy all different colors of the very same type cable. Or you can just choose a color, buy a bulk roll or kit of the type of cable you wish, and if you know what you are doing (or willing to learn), make many different types of ethernet cables from the same color ethernet cable.

Can you imagine trying to network a school or a multi-story high rise office building from 1 central location without a different color for each zone or floor? I wouldn't want to, some of those bundles are huge, the different colors help tremendously when doing the work of installation or when troubleshooting the network.

The color is used only in order to organize the cables in situations where many of them are used. There is no functional difference in the cables, and you can use whatever color you like.

the reason for different colours is, if your installing a network of many floors you can use a colour for each different floor or department. other than that there is CAT5-6 Patch, crossover, shielded or unshielded.
