Yeah, those names are both nice and traditional.
Sarah Elizabeth - This is the best order it flows really well. Not really many nicknames.
Matthew Thomas - This would sound good either way round. He'll probably get Matt/ Matty.

I used to know a girl in school whose name was Sarah-Elizabeth...and she always went by both. I like it as two names. Although it is a little predictable. I really like Matthew Thomas. Be warned that he will likely become a Matt when he gets older. But that is still cute.

I like Sarah Elizabeth, but I would spell it Sara Elisabeth. When it comes to Matthew Thomas, I don't think it flows as well as Sarah Elizabeth.
