The USDA stands for the United State Dept of Agriculture. They are responsible for setting the standards and laws regarding the meat industry. They monitor farms and how animals are slaughtered as well as butchering standards. They are the ones that can claim meat as organic or grass fed also. From the research I have done into them, they aren't doing a very honest job. Knowing how corrupt they are is enough to turn anyone vegan!
