what type of turtle is this?

It's a Fly River turtle (Carettochelys insculpta).
You are correct, they are protected, however there are quite a few of them in captivity.

About 3/4ths of the way in, you find that there are several of the turtles in there, and they do appear to be Pig-nose or Fly River Turtles.

Sort of looks like a softshell turtle to me or maybe a pignose turtle it hard to say from the video.
