The Wind In The Willows by Kenneth Graham why? Because it was the first book I read as a child and reading it again as an adult I still find it enchanting. It was also the first book that I read to my children. Kelly my youngest daughter always ends her greeting on my birthday cards with poop poop.

Ok, besides the Bible, here's a few tied for first:
"Climb the Highest Mountain," Mark Prophet
"The Reincarnation of Edgar Cayce?", Free and Wilcock, http://www.divinecosmos.com
"Expecting Adam," Martha Beck, Ph.D. (warm, funny, profound)
"Men in White Apparel" and "Watch Your Dreams," Ann Ree Colton
"The Great Divorce," C. S. Lewis (fantasy novella)
"The Beautiful Story of a Master," Louise-Marie Frenette
All of these are fairly easy reads.

V.C. Andrews is one of my favorite authors too!!
My favorite book is really a series of books (NO NOT HARRY POTTER) it's Diana Gabaldon's Outlander Series...best books I've ever read...I miss reading them now that I finished the existing books of the series and don't know for sure whether more are coming.
