We usually eat just chili one night. Then, somewhere between 1-3 days later this is what er do with it: Take tortilla chips and crush them up and put them on a plate. Put some chili on top of the chips. Then on top of that, put some cheese on it. I use sour cream and jalepino peppers also.

Baked potato topped with chili, chili dogs, bread bowl filled with chili, nachos and chili with Velveeta or cheese salsa.
Chili omelette (if it is a thick chili) add cheese and onions, top with some salsa and sour cream.
Spread chili in a baking pan and cook cornbread on top.
Chili burritos...roll up in flour tortillas with cheese.

I love chili on a baked potato.
You could always invite a friend over and share it.
EDIT: Wait, I just thought of something else. You could make frito pies, or chili mac. I also saw something where they had chili, then a thin layer of corn, then cornbread on top of it all. It was baked in a 9x13 pan.

You can spoon it over cornbread with cheese on top -- cook just until cheese melts and you know chili is hot. Or use it to make tortilla melts -- spoon the chili over tortilla chips cover with shredded cheese and cook for a couple of minutes just till cheese melts. You can make taco salad using chili instead of taco meat. You can also spoon it over rice with cheese and diced onions on the side for garnish (my favorite).

You can do Frito pies. Or you can make enchiladas and top them with chili. Those aren't exactly "different", but they are good. Some people even like chili on top of fried eggs.

You could add some to a baked potatoe, top it with cheese if you have it on hand.
You could also put it on hot dogs.
Thats about it...
Chili bake,,,chili on bottom then mashed potatoes on top then a layer of cheese bake at 350 for 40 minutes
thats all i can think of...

I take zip-lock freezer bags and freeze the excess. Then, you can take it out, microwave it, and viola, you have chili down the road (someday when you don't have time to cook). I nuke it in the bag for a little while, to loosen it up, and then dump the contents into a pyrex container (don't want the plastic to melt).
But to answer your question, for some varitey, you can put it on hotdogs (chilidogs), you can mix in some macarnoni (chilimac).
