one from scratch you know . Like you perfected it and not pasted from some website.

You see my hunnies is always talking about how great his Grandmas divinity was and how she'd alway make him some for Christmas. Well, we tried to buy it everywhere and he is just not impressed with any store bought divinity .

It would mean the world to me if maybe I could surprise him with homemade divinity .

Thank you

yes, my mother used to make it every year for me for Christmas.

3 c sugar
1 c corn syrup (there is a note beside this that says 1/2 cup makes it handle better, 1 c makes it kind of chewy). She used Karo
2 egg whites
1 t vanilla
1/4 t salt
3/4 c nuts

Combine syrup, water and sugar, boil to soft crack stage or a little past. Beat egg whites stiff and gradually beat in the boiling syrup. Whip until it begins to stiffen, add nuts and vanilla. Beat again and put in lightly buttered pan.

NOTE: You can't make divinity when it is raining, it will just not set up right.

Will you make me some too??

Microwave Divinity

3 c. sugar
1/2 c. light corn syrup
2/3 c. water
1/4 tsp. salt
2 egg whites
1/4 tsp. vanilla
1 c. chopped nuts

In a 3 quart bowl cook sugar, syrup and water in your microwave on high for 12-13 minutes. (Be extra careful getting this out of the microwave. It's heavy and HOT. Wear big cooking mitts because this can burn you badly. I have a big glass bowl with a handle and spout that I use.)

Add salt to egg whites and beat on high speed until very stiff. Do this in a big mixing bowl. Slowly pour mixture into egg whites, beating constantly until mixture loses its shine. Stir in vanilla and nuts. Drop by teaspoon on wax paper.

NOTE: It's trickier but you don't have to use the microwave. You can cook the sugar/syrup mixture in a pan on top the stove until it reaches the "firm ball stage." That's when you drop a small amount of cooked syrup in cool water it forms a firm ball.

Monks, Mystics and Yogis have a good divinity recipe. Culture the inner light until its bright enough to overcome the darkness.

I don't know what "divinity" is. I bet I could cook it, but I don't know what it is.
