Interrupt them right back! "allow me to finish please, you'll get your chance" Say it LOUD and CLEAR.

what I usually do is, after they're done, I ask them if it is ok if I finish.

the amount of sarcasm I use is geared to out relative positions in the scheme of things. If the big boss interrupted and it is obvious he's closed the subject, I don't ask [but just sit corrected].

if it's a little fish, I figure he needs the verbal thump up alongside the head that I just gave him

Yes, it is rude for them to interrupt you without your permission.
