Writting book based on this anyone who knows of these times any information could help me such as weapons used survival ways back then etc. Could even use some Scottish and French names for characters THANKS

Mounted cavalry proved more powerful than Roman infantry legion formations by 378, when the Goths wiped out a Roman army at Adrianople. Knight developed heavy armor and would attack the enemy standing line and break it up (hopefully). Behind then, the infantry, armed with swords would close and destroy the enemy formations.

The longbow was popular in England, and could pierce armor, as the French knights found out at Crecy (1346) and Poitiers (1415). The crossbow developed at this time, which was an effective weapon into the 16th Century. Siege engines were still based on Roman designs. The English developed the trebuchet at the end of the 13th century, which the King used to smash in castles in Wales and Scotland.

Gunpowder was reportedly first used by the Mongols when they invaded Eastern Europe in 1241. Hand weapons developed slowly, and due to lack of standardization, were still not in wide use until the 16th Century. Artillery, however, became a mainstay of armies by the 1400s. In fact, when the Turks besieged Constantinople in 1453, the Hungarian Catholics produced the cannon; they favored the Muslim over Eastern Catholic Rule.
