Well it is highly likely that the crystals in the sugar bag are not uniform in size.

What you need to do is find an average weight for the crystals. An easier way to do this might be to count out about 40 crystals, weigh them, then divide by 40 to get an average crystal weight It will be a little tedious to count them out, but not too bad. Once you get that you can divide a pound by that average weight for an estimate of crystals per pound.
