Deep dish pizza with those 4 items as toppings.
Get some pizza dough or an instant dough mix. Press into the bottom and partway up the sides of a round baking pan (I used a springform cake pan). You want a very thin layer of dough. Poke holes all over with a fork to release steam. Prebake for 5 min.
Also chop your toppings small. Saute mushrooms and add some salt. Same for courgettes. Steam broccoli with lots of salt. Cook through the spinach as appropriate depending on if it's fresh or not, maybe with garlic.
Then put mozarella all over the dough, then crushed stewed tomatoes with a little garlic, then your toppings, then a little more mozarella on top with maybe some romano too, and a drizzle of olive oil and a dusting of oregano. Make sure the tomato layer is not too liquid. Pop back in and bake some more (follow the instructions for the dough to know how long).

stuffed courgettes
Preparation Time: 20 Mins

Ingredients
4-6 courgettes
1/2 onion, coarsely grated
2 tomatoes, chopped
1/4 cup long-grain white rice
1 1/2 tbsp chopped dill
2 1/2 tbsp chopped parsley
salt & pepper
3 tbsp olive oil
vegetable stock
1 cup chicken stock
2 eggs, 2 lemons
Instructions
1. Preheat the oven to 350F. Cut the courgettes into 4cm lengths scooping out the seeds and pulp. Chop the seeds and pulp and reserve.
2. Combine the reserved courgette pulp & seeds, onions, tomatoes, rice, dill, parsley, salt & pepper. Stuff the courgette lengths and place in a baking dish. Pour the olive oil and 1/2 cup of water into the bottom of the baking dish, cover tightly and bake for 50 mins. Remove from the oven and reserve the juices.
3. Add chicken stock to the reserved juices and reduce for about 10 mins. Beat the eggs until light then add the lemon juice slowly. Gradually add the stock then heat gently. Drizzle over the stuffed courgettes and serve.
For a variation you could add minced lamb and garlic or use basil in place of one of the herbs

Vegetable quiche
(Serves 4 - 6)
Pastry
250 ml Blue Ribbon cake flour (1 cup)
250 ml grated Cheddar cheese (1 cup)
125 g butter or margarine
Filling
45 ml butter or margarine (3 Tbsp)
1 small onion, quartered
200 g butternut, cut into bite-size pieces
3 baby marrows, sliced (COURGETTES)
200 g button mushrooms
200 g brocoli
50 g spinach
1 clove garlic, crushed
125 ml sour cream (½ cup)
125 ml milk or cream (½ cup)
2 extra large eggs
30 ml chopped fresh mixed herbs (2 Tbsp) or 10 ml dried (2 tsp)
salt and freshly ground black pepper to taste
30 ml grated Parmesan cheese, optional (2 Tbsp)
1. Pastry: Mix all ingredients to a soft dough in a food processor or by hand. Press into base and sides of a greased 24 cm quiche dish.
2. Filling: Heat butter and sauté onion, butternut, baby marrows and garlic until slightly soft. Spoon all vegetables onto the pastry base.
3. Whisk sour cream, milk, eggs, herbs and seasoning. Pour over vegetables. Sprinkle Parmesan cheese over and bake in a preheated oven at 160 °C for 30 – 40 minutes.

Trade the courgettes at work for whatever you can. Mix the others together, add ranch dressing (assuming spinach is fresh, not canned) If spinich is canned, trade it away too.
Next time buy pop-tarts and beef jerky.

Wash, dry your ingredients, saute or grill & season. Serve as a layered sandwich using a grilled baguette.
It's very good - love the ingredients ( just be sure to cut the brocolli flowerettes small enough to saute in a short time & fit onto to bread roll without bit lumps here and there.)
It's a full meal and delicious.
