We like to remember Santa (Saint Nicolas) because in fact he was kind of a rich many in his day who was a blessing to the poor. Since Jesus received gifts of the wise men from the east we like to lump it together and give gifts on the day we remember His Birth. As for Easter Bunnies and Easter, neither one has anything to do with the Resurrection, but over the years people for one reason or another have associated these pagan ideas with Christianity. As for me, as long as Jesus is exalted then I don't have a problem with it.

The celebration of Jesus's birth was blended with midwinter festivals like, the Roman saturnalia. They took some elements like feasting, exchanging gifts, decorating the house with greenery etc, and added them To the religious celebration. Likewise Easter coincided with other spring festivities. Santa Claus and the Ester Bunny are purely fictional characters, though Santa Claus is very loosely based on a christian saint, Nicholas.

Just to point out that Santa Clause is derived from the dutch for St Nicholas who was a bishop in the fourth century. He is believed to have saved three girls form a life of prostitution by throwing bags of gold through the window at night to pay for dowries.

Sinter Klaus was an old Dutch myth (Cinder Klaus, Klaus being a common name). He came down the chimney to leave gifts, hence the cinders.

St Nikolas was a real man in Asia Minor who secretly gave gifts. Somehow the two got blended together.

Syncretism is nothing new in any religion, particularly Christianity.
