Make it 5-6 meals.
have about 400-450cal breakfast, then snack (250), lunch - 450, snack-250, dinner-400, snack-200.
Healthy foods dont contain loads of calories that come mostly from fat, frying and sugar.

Veggies veggies veggies! Veggies (fresh or steamed, never boiled) should make up 1/3-1/2 of every meal (except maybe breakfast. Go for fruit then.) Replace your bleached flour products with whole grains, those will fill you up faster and are good for your digestion. Have soup for lunch, the water helps you feel full faster. Don't sit down to a meal starved-- have a nice soup or salad beforehand. Don't skip the snacks! Just make sure they're good for you (more veggies, lowfat yogurt, etc). That'll keep you from eating too much at meals. Eat slowly-- your stomach can take up to 20 minutes to realize that it's already full. Eat one serving, wait 20 minutes, and then if you're still hungry, take some more. Stop eating not when you're FULL, but when you're no longer hungry.
The key thing is research. Find out how many calories (both fat and carb) are in different foods and PLAN your meals, preferably a week ahead of time. Make sure you have the things to make your meal on hand, so you don't decide to just eat whatever's lying around.

Very easily. The avg meal is normally 375-500 calories. The reason why people end up eating more then this is because they are consuming high fattening foods. There are plenty of cook books out there that show healthy meals that are under 500 calories. My favourite is "500 best healthy recipes" There are plenty of great varieties, plenty of food, and great for you. Best of luck!
