cover them with water over night. pour into strainer. Press excess liquid out with paper towel. Then cook. Or..... make them tonight and heat and crisp them tomorrow. I have done both way... but if you are short on time......cook them tonight.

If you want to jazz things up tomorrow, crumble and brown about a pound of bulk sausage, and dice some onions, and green peppers.
Using a griddle or large skillet, melt some butter and saute the peppers and onions for a couple of minutes, use about a cup of each, then add three cups of hash browns, and the precooked sausage.
Cook until the potatoes are done. Plate the hash browns and add some shredded cheese on each serving of hash browns.

The other answers are good. Use lemon juice or water to prevent browning, but if you really want good hash browns, pre-cook the potatoes (boil them for a few minutes til about 50% cooked). That way when you fry them they don't have to soften while frying, they are already half way there. Produces nice creamy tender potatoes in the center that are crisp on the outside from the frying.

They won't if you use lemon juice in the water you have them soak in! Use a little baking soda in the water. Add a few drops soya sauce in the oil. It won't change the taste.. it will help to brown them! another thing you can precut them soak them a hour in water with a bit of baking soda. Drain dry
and freeze them.. they'll be like what you get at the store but better! I've done it many times. No need for soya sauce then!
I however like to put a bit of that on my fries in place of salt! or dip my fries into light soya sauce!

Save your self tons of time by cooking your potatoes tonight. Bake or microwave them and cool them down. Then grate them when they are cool enough to handle. No water, just cover them over night and fry in the morning. If you cut them by hand then you don't have hash browns but country potatoes. The difference? the way they are cut. Pre-cooking your potatoes tonight will save 10 to 15 minutes in the morning because the potatoes are cooked and you only need to brown them. You will save time if you even cut or grate the potatoes in the morning. Don't forget to season the potatoes with salt, pepper, and garlic and onion powders. Fresh onion with hash browns is even better! Good Luck!

I have put poatoes for home fries in cold water and a bit of lemon and kept them very well overnight. But I grated up some once and rinsed them well and put a little lemon juice and water to cover overnight , drained well the next morning and fried them in butter til crispy and they were awesome!!

Yes you can precut them, but make sure you store them in water, enough at least to cover them, a bit more if you can.
Also, ad a few teaspoons of lemon juice, it won't flavor them, but it will keep them from browning!!
