Any wood that produces a nut or has a palatable sap is fine for smoking any meat. While hickory is the most traditional wood for smoking pork, in my opinion the best wood for pork is pecan. Be careful with any wood. It's real easy to add too much.

hickory is the traditional choice.

But aromatic woods like apple, maple, and mesquite work well also.

Pecan, mesquite, and apple are good choices as well
