It would seem to me that playing Airsoft in the woods would leave a lot of pellets unaccounted for. Do they biodegrade and what harm could be done to animals that comsume pellets left behind on the playing field?

They do make environmentally-friendly BBs hence they are labeled "biodegradable" (aka BIO BBs). Here is one offering:

Hopefully all outdoor airsofters use this type of ammo it is not that much more expensive to be outdoor-friendly :)

In a very dry cool environment, a very very long time. The pellets start to break down when exposed to moisture and heat, which in an outdoor wooded area could be anywhere from days to weeks.

No most are not biodegradable, but they do biodegrade over a very long period of time 100-1000s of years. With most animals they should just pass through their digestive system like in humans. Birds will even eat rocks to clear out their digestive system. Most of the pellets will be buried in the dirt and covered up with stuff fairly quickly, so they wont be on the surface forever.

No they are not. Most are plastic and plastic isn't biodegradable.
