CRAB SALAD

1 c. crabmeat, fresh or imitation
1/4 c. finely chopped celery
1/4 c. mayonnaise
1/4 c. chopped, pared cucumber
1/8 c. sliced stuffed olives
1 tbsp. finely chopped onions
1/2 tsp. salt
Dash of pepper
Sliced tomatoes, if desired

Combine all ingredients. Chill until serving time. Serve in finger rolls or mound 1/2 crab salad on a bed of lettuce, surrounded with sliced tomatoes, and sliced hard-boiled eggs.

EASY CRAB SALAD

1/2 pound imitation crab meat, cut in bite size pieces
1 stalks celery, chopped fine
Mayonnaise to taste

Combine all ingredients and serve on lettuce leaf or on a croissant for a great sandwich.

Put this salad in your favorite bread/pastry shell (I love croissants) for sandwiches

INGREDIENTS
2 pounds crabmeat
2 1/2 cups chopped celery
8 tablespoons mayonnaise
2 teaspoons celery seed
1 pinch paprika
2 1/2 tablespoons white sugar
1/2 tablespoon ground black pepper
1 teaspoon Old Bay Seasoning TM
2 teaspoons dried parsley


DIRECTIONS
In a large bowl, combine the crabmeat, celery, mayonnaise, celery seed, paprika, sugar, pepper, seafood seasoning and parsley. Mix well and refrigerate until chilled.
