I'm doing some research on allergens and food intolerances for breads and pastas. Specifically, many white breads and pastas make me feel really sluggish when I eat them. I don't just mean that I feel a little overloaded on carbs; I'm talking about two bites of macaroni and cheese moving my energy level from extremely high to lethargic in a matter of minutes--and the sluggish feeling lasts for hours.
On the other hand, I can eat pretty much any whole wheat or whole grain product, so I'm confident that the problem is not a wheat allergy. I have compared the ingredients of two products that make the problem really bad--white pasta and a Chick-Fil-A bun--and narrowed the list of shared ingredients down to mostly vitamins...it just doesn't make sense to me (I have stumbled on some research about B vitamin allergies, but I take a daily multi-vitamin). Any thoughts (besides "go see an allergist"--which I will probably do!)?
