Yes it will mold if the humidity is high enough to support mold growth. If the humidity is low in your refrigerator it will just dry out. That's probably why the change, you refrigerator is more humid.

Any cheese that has mold can safely be cut away if it hasn't totally gone bad. I have no idea what would have changed. I will suggest checking the expiration date on the box prior to buying it. I always try to buy products that have the furthest expiration date. I pitch the box after opening, and keep my Velveeta wrapped tightly in saran wrap in the crisper. I don't have it long enough for it to go bad. As you may guess, we love it. Velveeta makes the best Mac/Cheese!

Of course Velveeta can mold. Up until now you were lucky. The microscopic spores that mold grows from are now in you kitchen's (and fridge's) environment, and will be tough to get rid of. They won't harm you, they will just grow mold on items they find available (improperly stored).

Velveeta is a "cheese food." Meaning it is shelf stable. I'm sure once the foil package is opened, however, it will mold if there is mold in the fridge where you store it.

It depends upon the humidity level in your refrigerator. Normally, it just dries out when it's been in your fridge too long, but if there is high moisture-- it could mold.
