ROCK SALT PRIME RIB
rock salt
prime rib roast
½ cup water
Preheat oven to 500 degrees F. Line a roasting pan with foil and cover bottom of pan with rock salt. Place roast in pan and cover completely with rock salt, pressing salt into roast. Sprinkle with water. Roast uncovered 12 minutes per pound. Remove from oven. Hammer off rock salt and serve.
Serves 10 to 12

We have prime rib at least twice a year, and our favorite sides are mashed potatoes or roasted new potatoes, loaded salad or roasted asparagus -- finish it all off with homemade dinner rolls (you can cheat with the frozen kind, though.) and sauteed mushrooms.

perfect dinner would be, fresh garden salad to begin with, then with the prime rib, whipped potatoes with fresh chopped chives and a little summer savory, fresh summer peas with butter, yorkshire pudding, a nice beef gravey, fresh tray buns. For desert you could go for the baked Alaska or the cherry cheese cake, I'ld opt for the cheese cake myself, then a nice strong cup of coffee to finish it all off. Yum I'm hungry now. Good Luck

CREAMED GARDEN POTATOES AND PEAS
1 lb. sm. early red skinned potatoes (or 4 med. potatoes, cooked & cut into pieces before adding sauce)
10 oz. pkg. (1 1/2 c.) frozen peas
2 tbsp. butter
1 tbsp. chopped onion
2 tbsp. flour
1/4 tsp. salt
1/2 tsp. dill weed
1/8 tsp. pepper
1 1/2 c. milk
In medium saucepan, cook unpeeled potatoes in boiling water for 20 to 25 minutes or until tender. Drain, peel if desired. Set aside.
In same saucepan, cook peas as directed on package. Cook onion in butter until tender. Blend in flour, salt, dill weed and pepper. Stir in milk, heat until mixture boils and thickens, stirring constantly. Add potatoes and peas, heat through. 8 (1/2 cup) servings.
Mixture can be assembled a few hours ahead in a casserole. Cover and reheat at 350 degrees for 30 to 45 minutes or until bubbly.

Will depend on the context really. Which is better as a snack - fruits personally. It's tastier and gives you that little bit of sweetness. Which can be better as a snack if you are trying hard to slice back on sugar and lose weight vegetables
