I am guessing since it is gaping it is a pretty good cut. Fat looks like yellowish tapioca type of stuff. The first layers of skin will look white so it really depends on how deep you are looking.

Well, I got a big gaping cut right between my thumb and index, i could see the hole leading to my thumb. Dont worry just let it heal itself
