If that was the only thing in my fridge I would try it. It sound good. I would do the same thing that your going to do. Fry the bacon and then put it around the cheese and then put it in the microwave.

Ingredients
150g buffalo mozzarella cheese, drained
4 slices of speck bacon
4 tbsp Olive oil
1 pinch salt and pepper

Divide the cheese into quarters and wrap each piece in a slice of speck. Secure with wooden cocktail sticks.

3. Heat half the olive oil in a non-stick frying pan over a medium-high heat. Season the bacon wrapped mozzarella and fry for a few minutes on each side to brown and crisp the speck. Remove from the pan once the speck is crisp.

bacon is fantastic around EVERYTHING. If you like honey mustard I bet it'd be great dipped in that!
