I bought a cut of meat and this is the name of it. Didn't realize it until I got home. This means that it is a type of ham, correct? It was in the section with all the ham, so I assumed it was. I just want to make sure before I cook it.

And what does it mean to "score" the ham?

Lucky you! A Pork Picnic Shoulder is delicious...and smoked is even better. To score it, here's what you do: take a sharp knife and make cuts in the top of the pork skin about 4 inches long and about 1/2 inch deep. Make 3 cuts horizontally and 3 cuts vertically...like a tic-tac-toe pattern. This will help the skin crisp up nicely. The crispy skin is a real treat. It is known as the "cracklins". We all fight over it when my mom roasts her pork shoulder. If you want to enhance the flavor, put a few garlic cloves right into the meat. Here's how: Take a paring knife and stick it into the meat about 1 inch, then take raw garlic cloves (peeled) and press them into the holes. You can do this a few times on the sides, top & bottom of the roast. Bake as you normally would a regular ham. A brown gravy is also nice to serve with the slices of pork.

Yep, you are correct ....... scoring it means cutting the fat almost down to the meat (before cooking) lengthwise, and then back up across; it makes a beautiful diamond design, and at the same time, lets whatever your basting your ham with, get down into the meat.
