I made a ham already for a Christmas party, and I was in charge of sides also. Basically I roasted the ham with some water at the bottom, which collected all the juices of the ham. Then about 1 hour before the ham was done I put the potatoes, bay leaves and peppercorns in and they soak up all the hammy smokiness and saltiness. Really delish. I also made a green salad with spinach leaves, arugula and mixed lettuce, and green bean bundles wrapped in bacon and roasted. I have to say it really complimented the ham. Also, you can make a hollandaise sauce to go with the beans, which everyone also pours over the slices of ham on their plate! Yum!!!

Scalloped potatoes are always yummy. I also like peas in butter sause- there are some frozen "in a bag" types that you boil and then just put directly into a serving dish. Some people like wild rice- I do, but it can be kind of tricky to make, but then again I never claimed to be Martha Stewart!

I like Jalepeno Pepper jam with ham. This jam is also good with cream cheese and crackers. Scalloped potatoes, green beans, cranberry salad and pineapple upside down cake.

Im doing a spiral-sliced ham sandwich buffet with different types of breads, cheeses and condiments. I will also have olives, deviled eggs, crackers with spreads and dips and some desserts.

We have ham for New Years ....... we will have mac & cheese, collard greens, potato salad, yams, black eye-peas, rice, BBQ pig feet, and chiterlings.
