HOLIDAY BRUNCH CASSEROLE
1 package Jimmy Dean Sausage (cooked, drained and crumbled)
4 cups cubed day old bread
2 cups shredded sharp Cheddar cheese
10 eggs, slightly beaten
4 cups milk
1 tsp. dry mustard
1 tsp. salt
1/4 tsp. onion powder
fresh ground pepper to taste
Place bread in well-buttered 9 x 13" baking dish. Sprinkle with cheese.
Combine the next six indredients. Pour evenly over the bread and cheese. Layer sausage over top. Cover and chill overnight.
Preheat oven to 325 degrees. Bake uncovered for about 1 hour. Tent with foil if top begins to brown too quickly.

BRUNCH SAUSAGE CASSEROLE
1 lb. spicy pork sausage
6 eggs
3 c. milk
1 tsp. salt
8 slices white bread, cubed
1 tsp. dry mustard
1 c. grated sharp cheddar cheese
NOTE: Make day before and refrigerate overnight. Pop into oven 45 minutes before serving for brunch.
Saute sausage; drain. Beat eggs with milk, salt, and mustard. Layer bread cubes, sausage, and cheese in 9x13 baking dish. Pour egg mixture on top and refrigerate overnight. Bake at 350 degrees for 45 minutes.

Prep time:30 minutes
Cook Time: 6 or more hours
Container: Crock Pot, mixing bowls, large skillet
Serving: 12
Ingredients
1 pound sweet Italian sausage (or sausage of choice)
1 pound ground turkey (chicken, pork, hamburger)
1 large sweet onion (chopped)
2 cloves garlic chopped
1 red pepper (chopped)
2 cans green chilies (chopped)
1 pound sharp cheddar cheese, Swiss cheese or combination of both (shredded)
18 eggs
Salt and pepper to taste
1 tablespoon Dijon mustard or any mustard of choice (optional)
Directions
* In a large skillet cook sausage and ground meat until crumbled and no longer pink.
Season to taste if desired. Drain.
* In a slow cooker/crock pot, place the ingredients in order as follows: half of the
browned meat, half of the onion, half of the garlic, half of the red pepper, half of the
green chilies and half the cheese.
* Repeat the layers with the remaining portion of the ingredients.
* In a mixing bowl, beat the eggs and mustard together. Season with salt and pepper and
pour over the top of the ingredients in the slow cooker/ crock pot.
* Cover the slow cooker/ crock pot and cook on low heat for 8-9 hours.

Make your specialty if its simple. Most people bring pasta and a lot of heavy carbs so I tend to do the opposite. :)
Italian Zucchini
Preheat oven to 375*F
Slice 4-5 large zucchini's 1/4 inch thick on a diagnal and sprinkle with salt.
Place slices on a baking sheet and brush with olive oil or melted butter.
Finely chop or puree 5 cloves of garlic and put desired amount (about 1/4 tsp) on each slice.
Cover every slice with grated parmesan cheese and top with fresh ground pepper and italian spices - oregano, basil, parsley and rosemary.
Bake for 10-13 minutes.
People love this when i make it. be liberal with the spices and use good cheese.

2 packages (16 ounces, each) frozen corn
1 package (8 ounces) cream cheese, cubed
1/2 cup (1 stick) butter

Directions
Combine all ingredients in a slow cooker. Cover and cook on low for 4 hours.

I made cream cheese and sausage dip.
6 pkgs cream cheese
2 cans rotel
1lb cooked spicy breakfast sausage
Melt it all in a crock pot on low
serve warm w/ fritos or tortilla chips.
I take this to our office pot lucks and it is devoured in seconds.
