And if God knew that Adam and Eve would eat from it, wouldn't that mean he wanted them to by putting it there?

And is saying that God didn't know that they would eat from it an admittance that God is not as all knowing as one would lead you to believe.

He knew - it's a choice that would inevitably had to have been faced at one point or another by any creature with free will - were we going to trust God or do our own thing? The tree just made the choice concrete and unmistakable...

Ignoring the problem wouldn't make it go away.

God requires obedience from His children. The tree was put there by God because He wanted the tree there, and He warned them not to eat of it, but they did anyway. He gave us all free will, but He also requires obedience.

There are in fact commentaries that propose that the rebellion was necessary for the people's growth.
Other commentators say that they were meant to eat from it at a later point.
Both can kinda fit together - ie: you tell your todler not to touch certain things. As he grows you allow these same things - sometimes his refusal to listen is part of his growth.
