I'm cutting the recipe in half and don't have the lemon. Would this recipe come out ok without the lemon? Or should I drive into town for the lemon extract for only 1/4 teaspoon???

you should be okay, I cut stuff out like that all the time in recipies. 1/4 tsp isn't gonna make a difference and the vanilla will still give it the flavor it needs.
Dont add more vanilla it will be too strong.

I agree with Alice. Leave the vanilla extract out and do not substitute with anything else. If you use the lemon or almond extract, your peanut butter cookies will have a lemon or almond flavor to them. The peanut butter is a strong enough flavor that you can do without.

It will taste quite different, but good anyway I'm sure. My family loves lemon extract in most of our cakes and cookies, because that's what Great-Grandmother used.

If you have an orange, grate a tsp of zest and add it to the recipe. You can subsitute orange juice for the liquid in the recipe.

It should be fine but maybe add 1/4 teas more of vanilla

Leave it out. It just add a bit of flavor, but the cookies will be wonderful anyway.
