Is it a good idea to use left over roast beef in beef stew?

Sure!

Another thing you can do with left over roast beef is put it on a sub bun and sprinkle some monterey jack cheese on it, heat it in the microwave for a minute and dunk it in beef broth. Instant beef dip! (or French dip depending on where you live.)

you could or you could do hot roast beef sandwiches, the roast beef in a stew sounds delish though!!!

Yes - I did that with one roast that came out too dry. It became more tender in the stew - the longer you simmer, the better.

I cut up potatoes (chunks), fry on med in a little oil...(with onion), add diced meat...and any gravy or juice (fine if no juice)...put lid on and cook til potatoes tender. Wonderful!
Grandma called it "hash"
Or open-face roast beef sandwiches. Or cheesesteaks.
