I was wondering if I use cream cheese icing do you use the same smoothing techniques as buttercream. I sometime use a dab of water to smooth my buttercream.

This will work fine

Make sure that the water is warm as it will evaporate faster and not leave any color spots where the water was sitting for an extended period.

Cream Cheese Icing

Description
This is a double batch. Cut it in 1/2 for a single batch. For cakes or carrot cake.

Ingredients
1 lb. cream cheese, softened
1/2 cup unsalted butter
2 tsp. vanilla extract
1 tsp. orange peel, grated
1/2 tsp. orange extract
6 cups powdered sugar

Instructions
Make cream cheese frosting by combining next 5 ingredients in a mixing bowl. Beat with an electric mixer until smooth. Add powdered sugar and continue beating until smooth. Chill briefly to ease spreading. Assemble cake by centering one layer on a serving plate. Evenly spread 1/3 of the cream cheese mixture over top. Center remaining cake layer over top. Spread remaining frosting over top and sides of cake.

You just mix it till its smooth!
