I make a real good corn casserole
1 can creamed
1 can sweet
1 box of Jiffy corn muffing mix
1/2 stick butter
Mix the corns and the mix and add the melted butter. Pour into a casserole and bake at 375 for 45 min.
DELISH!

Sweet and sour brussels sprouts
2 pkgs (about 1 1/2 lbs) Brussels sprouts cut in half
1/2 cup cider vinegar
1/2 cup sugar
1 tsp mustard powder
1 tsp salt
12 tsp black pepper
1 medium red pepper cut in thin strips
1/2 cup thin sliced red onion (about half of a med size)
Mix together in a casserole dish, cover and bake for about an hour at 375. If the oven temp is lower, it will take longer, if the temp is higher, it will take less time - but not much. Stir once or twice during cooking to make sure the sprouts get sauced.

Hashbrown casserole....
2 lb. frozen hash browns, defrosted
1/2 cup melted butter
1 can cream of chicken soup
1 pt. sour cream
1/2 cup peeled, chopped Vidalia or sweet type onion
2 cups grated sharp cheddar
1 tsp. salt
1/4 tsp. black pepper
2 cups crushed bread crumbs or corn flakes crumbs
1/4 cup melted butter
Preheat Oven to 350 Degrees F. Defrost hash browns and drain well. Combine next 7 ingredients. Mix with hash browns. Put all in a 3 qt. Casserole. Sauté bread crumbs or corn flakes lightly in butter and sprinkle on top. Cover and bake at 350 for about 40 min.

Twice baked potatoes! Throw them in the microwave until they are soft, scoop out the insides add cream cheese or sour cream - or a little of both, mix it up and add the potatoe cheese mixture back into the potato skins. Stick in the fridge or freezer until the day you are ready and add cheddar cheeese on top, heat them in the oven and when they are the right temp, add some chopped chives and wallaaaa! a wonderful filling side dish that everyone loves!
Or spice cheesy cauliflower... cook cauliflower in water or steam, drain cauliflower, add cheddar cheese, mayonaise and spicy mustard, cook until cheese is melted and mayo is well blended - it sounds strange but it's always a hit! :)

OK here is an easy secret recipe. get some frozen potato hashbrowns (like oreida - the cubed kind)
can of mushroom soup
sour cream
package of cheese
corn flakes.
mix the hashbrowns (uncooked), cheese, sour cream and soup together. salt and pepper to taste. put in a well greased pan and back for about an hour on 350.
then, put cornflakes on top, drizzle with butter, and put back in the oven for about 10-15 minutes
it is SO GOOD AND EASY!!!

Cream Cheese Potatoes
You need: 10 large potatoes
6 oz. cream cheese
1 cup sour cream
2 tsp. onion salt
1 tsp. salt
2 tsp. butter
1/4 cup grated parmesan cheese
Then just: cook and mash the potatoes...add all the
ingredients....mix again.......lightly grease a casserole dish...
toss it all in ! Cool in fridge overnite
The next day just toss it in the oven for 45 minutes on 350.

Honey Roasted Red Potatoes....
Chop as many potatoes into small cubes as needed for the amount of people being served. Drizzle with honey and a little bit of oil. Sprinkle with salt,pepper and ground mustard. Toss to coat. Bake at 350 until tender.

green beans and bacon.
cut up about a pound of bacon in tiny peices and cook on low heat in a pot and when they are warm, not cooked all the way add a can off drained green beans. Heat on low heat until enough of the grease from the bacon has come out and the green beans are cooked.
They are really fattening but OMG delicious. Seriously!

Sweet Potatoes:
4 large potatoes
2 t. cinnamon
3/4 brown sugar
1/2 cup chopped nuts (pecans or walnuts)
1 cup mini marshmallows
Peel, quarter and boil sweet potatoes
Drain water and mash them in a large pot or bowl. Put 1 t. cinnamon, 1/4 cup brown sugar in the potatoes and fold well. Spread into a baking dish. Top with 1/2 brown sugar, marshmallows, 1/2 cup chopped nuts and 1 t. cinnamon. Bake at 350 for about 20 minutes.

Chipotle Mashed Potatoes
I N G R E D I E N T S
2 pounds (900 g) potatoes, peeled, boiled, and mashed
6 tablespoons (90 ml) butter
1/4 cup (60 ml) heavy cream (or more to taste)
1 medium onion, finely chopped
1 green bell pepper (capsicum), seeded and finely chopped
1/4 teaspoon (1 ml) ground cumin
1 canned chipotle pepper (or to taste), finely chopped
Salt and freshly ground pepper to taste
Combine the mashed potatoes, 4 tablespoons (60 ml) of the butter, and cream in a mixing bowl and stir to combine. Melt the remaining butter in a skillet and sauté the onion, pepper, and cumin until the onion is tender but not brown, about 5 minutes. Stir the onion mixture into the potatoes. Add the chipotle pepper (**note, that is one pepper, not one can of peppers), salt, and pepper, and taste to adjust the seasoning. Spoon the mixture into a buttered casserole and bake in a preheated 375F (190C) oven for 20 minutes.
