Holiday Cranberry Cobbler
nonstick cooking spray
2 1/4 cups fresh cranberries
1/4 cup sugar
1/4 cup chopped pecans
4 tbsp margarine or butter, melted and divided in half
1 egg, beaten or
1/4 cup egg substitute, beaten
1/2 tsp vanilla
1/3 cup sugar
1/2 cup all-purpose flour


Preheat oven to 350øF. Spray the bottom of a 9-inch pie pan with nonstick
cooking spray. Spread cranberries evenly over the bottom of the pan. In
a large mixing bowl, combine 1/4 cup sugar, pecans, and 2 tablespoons of
melted margarine. Pour the mixture over the cranberries. Then combine
the egg, vanilla, 1/3 cup sugar, flour and remaining 2 tablespoons of
melted margarine in the bowl and mix until the flour is moistened. Spread
this mixture over the cranberries. Bake for 45 minutes and serve warm.

Preparation time: 10 minutes Baking time: 45 minutes

Yield: 8 servings

what if I made the cranberries into a sauce (boil w/1cup sugar) and then put that into a cobbler?

This recipe sounds wonderful. If you found it too dry, I would add about 1/2 or 3/4 cup of OJ over top of the cranberries after you put them in the pan and before you put anything else on top of them.

most of the juice will cook away and things will still be moist.

OR you could toss some of the cranberries in a food processor and chop them up and then mix them with the OJ and the whole berries and then put them in the bottom of the pan

this will just give you a chance to experiment a few times before the big day---the downside is you may be sick of cranberry cobbler by then.

BTW, don't skimp on the OJ, oranges are in season now, use fresh juice or buy the not-from-concentrate stuff.
