I have a pasty mat that has the sizes of pies or pizza dough. I don't know exactly how to roll my cookie dough to 3/4 inch. The circumferences are 5", 8"10" etc. If anyone can help I would appreciate it. I'm hoping there is a circle circumference that is the same as 3/4 inch.

Just guess or use a ruler. We can't know how big to roll if we don't know how much dough you have. You could have 10lbs or 1 lb and telling you 10inch diameter wont help at all.

Your mat measures circumference so that is no guide at all.
The middle knuckle of your first finger (not the one with the nail) is pretty much 1 inch. Put your knuckle down beside the rolled out dough. When it is as high as halfway between the half and the full knuckle that is 3/4 inch.
I do it this way all the time.
Your eye is pretty good and probably as exact as you need for cookies anyway.
It is more important to have them an even height for cooking.
Try to make the dough same thickness for whole piece - again measure using your knuckle.
If one side of your cookie is thinner it will cook more, burn on that side or just look funny.

Well Fabmom - look at your knuckle it is close enough for what you are doing. It's not rocket science, the free world will not collapse if you are out by a nanometre.

Also I find often I do not have a ruler handy but I always have at least one of my fingers on hand so to speak.

If you are really worried measure your knuckle so you know from now on how close it is.

You could also just use a ruler to measure the thickness. That way, if your finger is longer or shorter than the previous answerer's, you'll know you're on target.
