gazpacho is a cold tomatoe soup with soaked bread in the bottom of the bowl, bortsch is a beet soup sometimes served cold.

There are lots of soups served cold but the two most famous are Vichyssoise ( leek and potato from France/the US ) and Gazpacho ( raw tomatoes, peppers, cucumber etc from Spain ).

vichyssoise - cold potato and leek soup. Story goes a chef was opening a roof garden restaurant but wasn't able to reheat the soup in time. So he added cream and served it cold.

gezpacho is a mexican vegetable soup. vicchysoise is a cold potato soup. there is also a cold creamy cucumber soup. some that are chilled and have fruit bases. on the whole cold soups are rarely served. most people don't want them. borsht is a cold beet soup etc etc...
