there are a lot of recipes floating around for Baked Brie, and I am a little skeptical...
whats your favorite recipe/ style (i.e. w fruit baked on top, sweetened w brown sugar and nuts, or just baked in a shell)

if you dont like it baked, why? does it change the texture dramatically once it is no longer out of the oven? does it change the smell?

BRIE IN APRICOT PASTRY WITH APRICOT JAM
1 sheet frozen puff pastry, roll into a 14’ square.
Spread with ¼ c. apricot jam.
Place 1 (13.2 oz) Brie on top of jam.
Fold pastry around cheese, crimp and seal. Trim excess dough. Pinch edges. Place seam side down on ungreased pan.
Beat 1 egg with 1 T. water. Brush over pastry.
Bake 400'’20- 25 min. til puffed and golden brown. (note- trimmings can be used to make decorative topping).
Serve with apple slices.

Brie has such a mild flavor, the baking just makes it creamier and doesn't affect the flavor or smell.
It is so yummy baked.

Next to the above recipe, I really like it with the brown sugar and nuts as well.

I'll cheat and use a ready made refrigerated pie crust.

place the brie on the pie crust, top the brie with a jelly or preserve (I like: fig preserves, raspberry preserves or this time of year jellied cranberry sauce), wrap the pie crust around the top of the brie and jelly, brush the crust with egg white, bake in the oven according to the directions on the pie crust package, serve immediately.

I like it both ways, but I think I may prefer it baked. It melts and is very creamy, almost like a custard instead of a cheese. As to change in smell. It gives the smell a more mellow odor and enhances the flavor of the cheese.

This is my favorite recipe. I absolutely love it. Make it for every holiday!
large sheet of puff pastry dough or 1 tube of refrigerated crescent dinner rolls
1 round or wedge of Brie cheese
Raspberry Jam, or other sweet jam
Brown sugar
1/4 cup of maple syrup
1 Preheat oven to 350 degrees F.

2 On a stick-free cookie sheet, lay out the puff pastry or the crescent rolls flat; put brie round or wedge on top.

2 Spread jam on brie, fold dough over top. Drizzle maple syrup and place a handful of brown sugar on top.

3 Bake at 350º for 25 minutes. Let cool for 10 minutes before serving.

Serve with crackers and apple slices.

I like it baked and I put a little Dijon mustard on top before closing the puff pastry. I serve it with fresh pear slices too.

baked in it's own natural shell with sliced almonds on top. Be careful not to overheat or you will have a pool of brie.

I personally do not like it baked, I like it room temprature. It just gets to slimey in the oven for my taste but many people love it.
