You could make some nice fruit parfaits (fresh chopped blueberries, strawberries, pineapple, rasberries, etc. with a few light layers of Cool Whip in between. You could also offer muffins or some yummy Belgian waffles topped with fruit. Or, you could offer different bagles with different spreads (such as cream cheese and/or jams). You could also offer a meat selection, such as ham cut into squares or light chicken sandwhiches with a spread. Whenever I think of brunch, I think. It's not quite breakfast, but it's not quite lunch either. Find the happy medium in between. :)

Also, brunch can be really pretty served outside on the lawn. Find some pretty white linen tablecloths and adorn your table with fresh cut flowers...you'll make quite a statement and it's rather simple! For brunches in the wintertime, you can serve it indoors with tables near the Christmas tree. Brunches are made extra-special based on the atmosphere you create around it. :) A happy smile on your face is always inviting too. :)

Oh my dear... the wonderful concept of "Brunch" is the fact that it is a mesh of Breakfast & Lunch!
So go ahead and enjoy either one.
I like to say I am having Brunch when I pull my **** out of bed at 11:00 AM and hit-up the local cafe (in hope of them still serving breakfast) after a long night of drinking. It just feels more kosher that way.

Either a quiche or an egg casserole, served with bacon or hot sausage, croissants w/ European butter, OJ, and tea/coffee! I've also served a moderately priced Champagne! People enjoy that little extra touch.
