12 ounces mild bulk sausage
12 ounces hot bulk sausage
10 eggs, lightly beaten
1 cup sour cream
1 large onion, chopped
1 green pepper, chopped
1 red pepper, chopped
1 zucchini, chopped
16 ounces mushrooms, sliced
2 cups cubed American cheese

Preheat the oven to 350 degrees F.
Cook sausage. Drain grease and set aside to cool slightly.
In a large, deep baking dish, add sausage, eggs, sour cream, onion, peppers, zucchini, mushrooms, and cheese and stir to mix. Bake for 30 minutes or until golden color

This is what I am making for breakfast on Christmas: a baked French Toast Casserole.

1 loaf French bread (13 to 16 ounces)
8 large eggs
2 cups half-and-half
1 cup milk
2 tablespoons granulated sugar
1 teaspoon vanilla extract
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
Dash salt
Praline Topping, recipe follows
Maple syrup

Slice French bread into 20 slices, 1-inch each. (Use any extra bread for garlic toast or bread crumbs). Arrange slices in a generously buttered 9 by 13-inch flat baking dish in 2 rows, overlapping the slices. In a large bowl, combine the eggs, half-and-half, milk, sugar, vanilla, cinnamon, nutmeg and salt and beat with a rotary beater or whisk until blended but not too bubbly. Pour mixture over the bread slices, making sure all are covered evenly with the milk-egg mixture. Spoon some of the mixture in between the slices. Cover with foil and refrigerate overnight.

The next day, preheat oven to 350 degrees F.

Spread Praline Topping evenly over the bread and bake for 40 minutes, until puffed and lightly golden. Serve with maple syrup.

Praline Topping:
1/2 pound (2 sticks) butter
1 cup packed light brown sugar
1 cup chopped pecans
2 tablespoons light corn syrup
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg

Combine all ingredients in a medium bowl and blend well. Makes enough for Baked French Toast Casserole.

1 frozen bag of hash browns
12 eggs scrambled
2-3 packs cooked bacon.
Large bag of cheese

Cook the hash browns according the bag.
Layer the casserole dish (about 9 x 12). First go hash browns, eggs, bacon, cheese. Keep doing this until the casserole dish is filled or the ingredients run out. Make sure you top it with cheese. Bake on 350 degrees for 10 minutes or until cheese is melted and ingredients are heated thoroghly.

Cheesy Ham and Hash Brown Casserole


1. 1 (32 ounce) package frozen hash brown potatoes
2. 8 ounces cooked, diced ham
3. 2 (10.75 ounce) cans condensed cream of potato soup
4. 1 (16 ounce) container sour cream
5. 2 cups shredded sharp Cheddar cheese
6. 1 1/2 cups grated Parmesan cheese


1. Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 9x13 inch baking dish.
2. In a large bowl, mix hash browns, ham, cream of potato soup, sour cream, and Cheddar cheese. Spread evenly into prepared dish. Sprinkle with Parmesan cheese.
3. Bake 1 hour in the preheated oven, or until bubbly and lightly brown. Serve immediately.

Yield: 12 servings

******Crock Pot/Slow Cooker Southwestern Egg Bake

Prep time:30 minutes
Cook Time: 6 or more hours
Container: Crock Pot, mixing bowls, large skillet
Serving: 12

Ingredients
1 pound sweet Italian sausage (or sausage of choice)
1 pound ground turkey (chicken, pork, hamburger)
1 large sweet onion (chopped)
2 cloves garlic chopped
1 red pepper (chopped)
2 cans green chilies (chopped)
1 pound sharp cheddar cheese, Swiss cheese or combination of both (shredded)
18 eggs
Salt and pepper to taste
1 tablespoon Dijon mustard or any mustard of choice (optional)

Directions
* In a large skillet cook sausage and ground meat until crumbled and no longer pink.
Season to taste if desired. Drain.
* In a slow cooker/crock pot, place the ingredients in order as follows: half of the
browned meat, half of the onion, half of the garlic, half of the red pepper, half of the
green chilies and half the cheese.
* Repeat the layers with the remaining portion of the ingredients.
* In a mixing bowl, beat the eggs and mustard together. Season with salt and pepper and
pour over the top of the ingredients in the slow cooker/ crock pot.
* Cover the slow cooker/ crock pot and cook on low heat for 8-9 hours.

Sausage cheese biscuit casserole


1 (10 count) package ready-to-bake refrigerated buttermilk flaky biscuits (must use flaky variety, one can of ten biscuits)
2 cups monterey jack cheese, grated
1 lb pork sausage
2 tablespoons parmesan cheese, grated
2 eggs
salt and pepper


Preheat oven to 325 degrees.
Spray Pam in muffin tins, or lightly grease.
Divide each biscuit, BY LAYERS, into three parts. Place each third into a muffin cup.
Combine remaining ingredients.
Place one tablespoon of mixture into each biscuit lined muffin tin.
Bake for 25 minutes.
Freezes well. After freezing, thaw, cover with aluminum foil and warm in a slow oven.

Country Breakfast Skillet

INGREDIENTS:

* 6 slices bacon, cut in 2-inch pieces
* 1/4 cup chopped green bell pepper
* 2 tablespoons finely chopped onion
* 6 cups cubed cooked potatoes
* 1/2 cup shredded sharp cheddar cheese
* 6 eggs, lightly beaten
* salt and pepper, to taste

PREPARATION:
In a large heavy skillet, cook the bacon over moderate heat until crisp. Remove the bacon to drain. Pour off all but 3 tablespoons of dripping.

Heat the drippings remaining in the pan until sizzling.

Add the bell pepper, onion and potatoes; cook, stirring gently, until the potato cubes are browned.

Sprinkle on the shredded cheese and stir until melted. Add the eggs and cook, stirring gently, until the eggs are set. Season with salt and pepper. Sprinkle on the crumbled bacon and serve at once. Serves 4 to 6.

* 4 slices white bread, crusts removed
* 4 eggs, slightly beaten
* 1/2 cups milk
* 1 teaspoon dry mustard
* 1/2 teaspoon dried minced onion
* 8 slices bacon, cooked and crumbled
* 1 cup (4 ounces) shredded mild Cheddar cheese

PREPARATION:
Place bread in a lightly greased 8-inch square baking dish; set aside. Combine eggs, milk, dry mustard, and dried minced onion; pour over bread. Sprinkle bacon over casserole; cover and refrigerate 8 hours.

Remove from refrigerator; let casserole stand 30 minutes. Bake, covered, at 350° for 20 minutes. Uncover, sprinkle with shredded Cheddar cheese, and bake an additional 5 minutes. Let breakfast casserole stand 5 to 10 minutes before serving.
Breakfast bacon and egg casserole serves 4.

Bake at 350° for 35 to 40 minutes.

We do the breakfast casserole thing - but we like croutons for the base - Chatham Village if you can find it! Mmmm!

They have potatoes, peppers, etc. all you add is the eggs, and they are really good!

take a large cake {9x12 pan}, fill it with a layer of hashbrown potatos. shread onion and bell peppers{chopped} on next. add a large amount of scrambled eggs over that. put a layer of your favorite cheese next. for the next layer, add meat. bacon and sausage are my 2 i use. put on a final layer of hashbrowns. salt and pepper to taste. bake for 30 min. or until down. 325 or 350 depending on your oven. for extra spice, add hot peppers.
