My wife is roasting a turkey in the oven in a pan....Can she add baby carrots and red potatoes in the pan, while the turkey is roasting???

Yes, of course, as you do when roasting any meat if you so choose. Add them about the last 45 minutes to an hour so they don't turn to mush. Many people, just for the flavor, roast the meat on top of all kinds of root veggies, which flavors not only the meat but gives you some great drippings from which to make gravy.

Certainly. Their flavor will help to improve the pan juices if you want to make pan gravy. They also can add flavor to the turkey itself. Add them closer to the end of roasting, perhaps an hour to an hour and a half before the turkey is finished. Get them into the pan quickly to avoid letting too much heat out of the oven.

But it's best just to add them an hour or two before the turkey is finished. If she put them on at the beginning, they would be mush by the time the turkey's ready.

You can, but they will be swimming in the grease from the turkey if you put them in too soon and don't suck out most of the grease with the turkey baster.

If it were me and I had my heart set on those baby carrots and red potatoes I would wait till about 45min to 1 hour before the turkey would be done, suck out most of the grease then put them in with the turkey.
