I think it has something to do with sacrifice. The Jews used to do it (I'm not sure if they do that anymore) as a way to atone for their sins. I'm not sure why Muslims would do it though, since they have the whole 'good angel bad angel' thing.

According to the Bible and the Koran: One of the prophets, Abraham (Ibrahim), in the old testament was willing to sacrifice his son Isaac (the muslims call him Ishmael) if it was according to Gods (Allahs) will. Right before he went to kill his son, God spoke to him and said that he has done well and proved his loyalty and did not need to kill his son but use a sheep that was in the nearby bushes instead. Sure enough, there was the sheep and Abraham used that instead.
By sacrificing sheep Muslims are honouring the willingness of Abraham to follow God.

Americans kill turkeys for their holidays. Serious answer there.
I am not Muslim or Christian. In fact, I too am Buddhist.
Why do tibetan Buddhists play musical instruments made from human bones?
All religions have their practices. The sacrifice of animals is a tribal thing, it ritualizes the sharing of plenty among your personal group, family or village.

Goats are also popular victims, but the high quality imported ones are increasingly expensive.
Almost all religions have in the past combined the holiness of sacrificing an animal to a cruel god, with the convenience of a healthy feast for the family.

The current muslim holiday, Eid, is a celebration of Abraham's willingness to sacrifice his son to god. God, of course, stops abraham just in time and according to muslim tradition, god provided two sheep in place of his son, which abraham then sacrificed.
Thus the tradition to slaughter sheep (and give the meat to the poor) is a re-enactment, of sorts, of that event.

We make qurban (sacrifice) during the festive season of Aidiladha as an order from God, in the Quran Surah Al-Hajj verse 34-36;
(Meaning)
34. And for every nation, We have ordained the rites of sacrifice (and other rites), that they may pronounce the name of Allah in gratitude for His gifts to them, namely the sacrificial animals. For your Lord, is the One and Only God; to Him surrender yourselves. And give good news (O Muhammad) to those who obey in humbleness-
35. That is, those whose hearts are filled with awe at the mention of Allah; who endure with fortitude at whatever misfortune that may befall them, and attend to their prayers, and bestow in charity of that which We have given them.
36. And We have made the camels (which are given to the poor of Makkah) a part of the rites of Allah. In sacrificing them there is much good for you. Therefore, pronounce over them the name of Allah (during the sacrifice) as they stand on three legs; and when they fall down on their sides (and die), eat a part of their flesh and feed with it (the other parts) the contented who does not beg and the beggar. Thus We have subjected them to you (to have mastery over them and to offer them as sacrifice), so that you may be grateful.
But the meat, or the product of the qurban is not for God, as He don't need them. It only shows taqwa (Godconsiousness) of His servant. As of God words in the following verse (Surah al-Baqarah verse 37)
(Meaning)
37. The flesh and blood of the sacrificial animals, or the present made of them, do not reach Allah; but it is your Godconsciousness that reaches Him. Thus He has subjected these animals to you, so that you may glorify Allah for giving you His Guidance. And give good news (of the best of rewards) to those who do good.
Not only sheeps, Muslim can sacrifice other animal as prescribed in the Quran, such as camel and cow.
Hope this can answer your curiousity. TQ.
