Because the fat is on the edge rather than marbled through the meat and you can't serve pork rare, it will always come out a little dry.
Grilling will make the meat the driest, so I would suggest avoiding it for this particular cut. You can cook them in the oven, although personally I find that they tend to over caramelise underneath and taste too strong and 'marmitey'.
My favourite method is frying with just a little oil, this gives you a lot more control on how much you brown it, and it's easier to tell when it is 'just' cooked. When I cook loin chops, I like to marinade them in a mix of worcester sauce, soy sauce and garlic for a little while - this gives a wonderful flavour and gives a slightly sticky coating which helps if they do end up a bit dry.

If you have plenty of time do what my parents do:
Brown all over is a very hot pan for a few seconds each side. Put in ovenproof dish. Fry a few onions and fry for a minute or so. Add some water - slake your Bisto powder and add to the water and stir continuously until the thickness you want (adding more mix if you have to). Sprinkle in some Paxo stuffing (dry) and mix again and pour over chops.
Pop them in the oven on a lowish setting for an hour or so until cooked and very tender.

or if time is short make up a topping, like stuffing or some sort of crumb. Breadcrumbs with herbs and butter, touch of lemon juice and put a layer on the top of each chop and bake in the oven for 20 minutes - 180-190 degrees until cooked.
Let rest for a bit before serving.
Also the best gadget for the kitchen to check meat is cooked is a meat thermometer. They have a dial that shows you when a particular type of meat is cooked. Great if you don't want to ruin a topping to see if its cooked.

Pork and apple chops
Serves 4
Preparation time less than 30 mins
Cooking time 10 to 30 mins
Ingredients
4 175g pork loin chops
2 tsp English mustard
225g/8oz Bramley apples, peeled, cored and sliced
75g/3oz cheddar cheese, grated
2 tbsp snipped fresh sage or 1 tsp dried
salt and pepper
Method
1. Preheat the grill to high.
2. Place the chops on the grill rack and season on both sides with salt and pepper. Cook for 10-15mins, turning once until browned and cooked through.
3. Thinly spread a little mustard over each chop. Heap the Bramleys, cheese and sage on top.
4. Return to the grill and cook for a further 4 mins or until the topping is golden brown. Serve straight away with creamed potatoes and vegetables.

Try this:
Season and brown on the stove....transfer to a 350 oven and cook for about 20 minutes, take them out and spread a can of ready made chili no beans on top of the pork chops. Put back in the oven until heated through. Take and spread shredded cheese on top...back in the oven to melt the cheese, these are delicious, and serve with mashed potatoes and corn. Mu family loves this!

Yes, cook to a temp of 160 inside and let them rest covered for 5 mins before serving.
About 25-30 mins in a 350 oven for a 1 inch thick chop

They will cook very well in the oven. I cut large bramley apples into thick slices across their circumference after removing the core and put these on top of the chops halfway through the cooking time.
It will stop the meat drying out and make its own sauce.

Flash fry them for a couple of minutes.
Put them into a casserole dish with some chopped onion and carrot (optional).
Cover with dissolved stock cube and make sure they're covered with enough water.
Stick 'em into the oven for a couple of hours - I put mine in for longer, but that's up to you.
Then remove from the oven, put on top of cooker, turn up heat, add gravy granules and stir until thickened.
The chops should be nice and tender, but sometimes they fall to pieces a bit.

put them in a pan with garlic, rosemary, salt & pepper. Pour some soy sauce, and worchester sauce on them not too much, add a little water to the pan, cover and bake slow and long
