i use to order this fried rice (fu chow) from this chinese restaurant and they serve really good and delicious food there, i would like to know how they managed to cook the prawns till that are so succulent and juicy?

i think they must have boil the prawns with the shells intact. when the prwans are about cooked they scouped it up and put it in a bowl of ice cold water.

All the proposition of the people are good... but the most important is the quality of the shrimp.. not really how you cook them! Frozen ones have a lot of water and when you fry them they get very dry... and some fresh ones are of bad quality, which means that they taste like chewing-gum. Ask the chinese where they buy their shrimps!

the secret is to add the prawns at the end and do not over cook they are usually done once they turn pink and the heat of the rest of the dish will finish them off...

two elements: high heat and lots of butter or oil. If you want to cook them yourself, put a non stick pan on the stove at medium to med/high heat and add 2 or 3 tbls of butter, Saute them for only 3-4 minutes (you will see them turn pink quickly) and remove them from the heat. If you overcook them they will dry out, just like any other meat. Have fun!!!!

Whichever way you cook them, be sure not to over cook them. Just until they are pink or they will be tuff.

They saute it very quickly.
