Click Start
Go to Run
Type MSConfig
Go to the Startup tab
Remove the programs you don't want to start
It will tell you you are using selective startup when you reboot.
Just click the don't show me this again check box and hit ok.

Some of them you can just remove by taking them out of the 'startup' group,(Start Menu->Programs->Startup) but very often they are embedded in the registry and the only easy way to stop them coming up is to uninstall the application. If you have access to your registry then you can make the change if you know what you are doing, but I would not recommend it.

Quite often you can un-check the task-bar option when installing an application. Try re-installing the offending application and see if it gives you that choice.

Very occasionally applications have a 'disable taskbar icon' option if you right-click a taskbar icon to bring up the context menu.

best to set them manually by right click for drop down menu and set to "not to run at start up"
