You can use another extract, but if you need vanilla extract, go get it.

there really is no substitute for vanilla. Other extracts could be used but you would no longer have pecan sandies but a new and different cookie. That is not to say they would no be perfectly ok, just that they would not be sandies. Vanilla enhances the sweet taste of sugar and is more subtle than other flavorings. do not add additional liquid to the recipe as it would change the texture of the finished product. Run to the store and get a good vanilla.

The vanilla exists usually to bring like this balance to the butter and the sweetness so it's a really improtant ingredient. You usually never taste the vanilla in your cookie or whatever, but you can tell that it's missing. If you aren't willing to go out and buy some vanilla I'd suggest that you just not add anything at all as to not change the flavor of the cookie. while adding another extract like almond or a liquor would be tasty; it would greatly change the buttery flavor of the sandies and would probably overpower it all. Just skip it, don't add anything the amont of liquid is minute and won't change anything. Your cookie wouldn't be as good but it would turn out fine without it.

If you have any other kinds of extracts or flavorings you could try adding a little almond or maple extract. I'd put in half of the amount of vanilla called for, as these flavorings can be more dominant than the vanilla.

You can use many things to substitute. Almond extract, rum, amaretto, Grand Marnier, framboise, or any of dozens of other extracts, essences, brandies, or liqueurs could stand in for vanilla in certain recipes, accentuating and blending flavors. They will taste great!!!

You could use either almond extract or vanilla extract. If you have any orange extract, you could use that too. If you don't have any extracts at all - use either water or a little orange juice (like 1 tsp if that's the amount called for in vanilla.

Any margarine... several, such as Becel, promote healthy fats. Margarines based on Canola or Olive Oils are a good bet.

id say make some sort of sugar water or something vanilla is pretty sweet want to match the sweetness with whatever u end up using
