This is a recipe from a little Italian woman in a town near to where I live.
1 lg can tomato sauce
1 sm can tomato paste
1 can chicken broth
1 whole onion, peeled
tsp allspice
tsp ground cloves
raw italian sausage(I use the link style)
Place everything in a dutch oven, or other large kettle and simmer for at least 4-6 hours. The sausage cooks through all the way and before serving, just break apart with the spoon into bite sized chunks. The onion is left whole and can be broken down, or removed before serving.

Pasta with ham in creamy tomato sauce-
Gives a RICH TOMATO sauce ;)

INGREDIENTS
1 (16 ounce) package mostaccioli pasta
1 (1 pound) pre-cooked ham steak, diced
1 pint heavy cream
3/8 cup white sugar
1 (12 ounce) can tomato paste
1 tablespoon soy sauce
1 teaspoon salt
1/2 pound shredded Swiss cheese


DIRECTIONS
Bring a large pot of lightly-salted water to a boil. Add pasta and cook until al dente, 8 to 10 minutes; drain well. Place the pasta in a large bowl.
Heat a skillet over medium heat. Cook the ham in the skillet for 3 minutes. Add the cream, sugar, tomato paste, soy sauce, and salt; stir. Reduce heat to medium low and cook and stir until the mixture reaches a low boil.
Pour the sauce over the drained pasta. Sprinkle the Swiss cheese over the top of the pasta; stir until the pasta is evenly coated.

A Touch of Garlic's Garden Fresh Tomato Basil Sauce

1/2 cup crushed fresh garlic
1/2 cup extra-virgin olive oil
1 cup julienned onions
8 med fresh ripe tomatoes
1 pch sugar
Salt to taste
Freshly-ground black pepper to taste
1/4 cup coarsely-chopped fresh basil

Add garlic and oil to a medium size sauce pot on low heat. Stir garlic often until evenly golden but not browned. Add onions and continue to saute until onions are sweet and translucent. Again being careful not to brown.
In seperate pot bring approximatley 2 quarts of water to a boil. Prepare tomatoes by removing core and cut an (X) just through the skin on the bottom of each tomato using a small serrated knife. In a bowl prepare an ice bath consisting of 1 quart ice, and 1 quart cold water.
Blanch prepared tomatoes in boiling water 4 to 6 minutes then remove from boiling water and place them in ice bath until cooled. Remove tomatoes from ice bath, peel off the skins and chop into 1/2-inch dice.
Add diced tomatoes into garlic and onion mixture and turn heat up to medium temperature. Add salt, pepper, and sugar and cook for approximatley 30 minutes. Remove from the heat and add basil to finish.
This recipe yields 4 servings of sauce over the pasta of your choice.

CAROL'S SPAGHETTI SAUCE AND MEATBALLS

SPAGHETTI SAUCE

3/4 c. chopped onion
3 tbsp. salad oil
2 1lb. cans Italian tomatoes
2 6 oz. cans tomato paste
2 c. water
1-1/2 tsp. dried oregano
2 tsp. dried parsley
2 cloves garlic, chopped
1-1/2 tsp. salt
pepper to taste

In Dutch oven, saute onions and garlic in hot oil until tender. Add remaining ingredients. Stir well. Add meatballs if desired. Simmer for 3 hours. Stir often. Add more water if sauce becomes too thick.

MEATBALLS

2 slices day-old bread
milk
2 lbs. hamburger
2 eggs
1/2 c. Romano cheese
2 tbsp. dried parsley
1 tsp. oregano
1 tsp. salt
1/2 tsp. pepper

Soak bread in milk 2 to 3 minutes. Squeeze out extra milk and tear into small pieces. Mix well with meat and remaining ingredients. Shape into 2" balls. Drop the meatballs into the spaghetti sauce and cook.

Note: the bread and eggs keep the meatballs from falling apart.
